Turkey Brining & Roasting

Ingredients

  • about 2 gallons water, divided
  • 2 Cups Brining Spice
  • 1 (12-20lb) turkey (fresh, or thawed) turkey breast also works.
  • Your Choice: Roast Turkey Rub, Multnomah Falls Rosemary Citrus Seasoning, Ochoco Forest Seasoning
  • Equipment:
  • Large, food safe container
  • Brining bag with tie
  • Medium pot
  • Roasting Pan

Steps

  • Line a pot big enough to fit your turkey with brine bag ( a cooler works well too)
  • In a medium pot, bring 1 quart water to a boil. Add Brining Spice and stir to dissolve. Remove from heat and cool to room temperature.
  • Place turkey inside brining bag. Pour cooled brine into brining bag along with enough remaining water to fully submerge turkey.
  • Tightly twist and close brining bag with black tie, pulling small end through the hole until it is secure.
  • Refrigerate turkey in brine for 1 hour per lb.
  • Preheat ove to 325 degrees. Remove turkey from brine and pat dry. Rub all over with seasoning of choice.
  • Place turkey in roasting pan and roast for 15 min. per lb or until internal temperature at thickest part of breast reaches 160 degrees. Rest turkey (covered) for 30 min before carving and serving.
