Oregon Fried Rice

Ingredients

  • 3-4 Cups cold cooked white rice
  • 2-4 large eggs beaten
  • 1 Cup mixed vegetables
  • 1/2 white onion diced
  • 2-3 Tbsp soy sauce
  • 1 Tbsp Sesame oil
  • 2 Tbsp vegetable oil or butter for frying
  • 1 Tbsp Mt. Hood Toasted Onion
  • 1 tsp Tumalo Falls Onion & Garlic Seasoning
  • Optional - Garlic Chile Crunch
  • optional: green onions, chicken, shrimp, ground pork

Steps

  • Prep: Chop all vegetables and have sauces ready, as the cooking process is fast.
  • Scramble Eggs: Heat 1 tablespoon of oil in a wok/skillet over high heat. Add the beaten eggs, scramble quickly until just set, and remove them from the pan.
  • Sauté Aromatics & Veggies: Add the remaining oil to the pan. Add onions, carrots, and peas. Stir-fry until tender-crisp (about 2-3 minutes).
  • Fry Rice: Add the cold rice to the pan, breaking up any clumps with a spatula. Stir-fry for 2-3 minutes until the rice is hot and starting to brown.
  • Season: Pour the soy sauce and seasonings over the rice. Mix well to ensure every grain is coated.
  • Combine & Garnish: Add the cooked eggs back to the pan along with the green onions and sesame oil. Toss everything together for another 30 seconds.
