Smoked Pulled Pork

From the kitchen of Top Hat Spice Shop

Prep Time / Cook Time

15 minutes / 600 minutes

Cooking Method

Smoker or Oven

Yield

a lot of pulled pork

Ingredients

  • 5-10lb Pork Butt or Shoulder
  • 2 Cups Apple Cider
  • Georgia Boys All-Purpose BBQ Rub or
  • Ranch Hand Kansas BBQ Rub
  • BBQ Sauce of your choice

Steps

  • Trim pork of excess fat. Rub seasoning on generously. Option to use Cue Glue with seasoning for a nice bark
  • Preheat the smoker or oven to 250
  • Insert a metal metal meat thermometer (remote is ideal) into the thickest part of the pork. Place fat side up on the grill grates and cook until temperature reaches 160 degrees. 4-6 hours depending on the size of the pork butt.
  • Stack 4 large pieces of aluminum foil on a baking sheet. You need enough to wrap the pork butt completely. Transfer the pork butt to the foil and fold up edges. Pour apple cider on top of pork. Wrap the foil tightly around the pork making sure the tip of the thermometer is exposed.
  • Place the foil wrapped pork back on the grill and cook until internal temperature reaches 204 degrees. Another 3 to 4 hours.
  • Remove the pork from the grill and let sit for 45 minutes in foil. Remove the pork from the foil and drain any excess liquid.
  • Shred or chop the meat. Remove excess fat or bone. Add more seasoning and optional BBQ sauce
